This recipe for Creamy Lemon Garlic Pasta starts by cooking pappardelle pasta to al dente and reserving some of the pasta water. The sauce begins with melted butter which is combined with minced garlic cooked briefly to release aroma without browning. Lemon juice, pasta water, Italian seasoning, salt, and freshly cracked black pepper are then added and brought to a rapid boil.

Once boiling, the pan is removed from heat and cream is whisked in to form a smooth base. The pan returns to heat while Parmesan cheese is incorporated, melting into the mixture and causing the sauce to thicken. The finished sauce coats the pasta along with lemon slices, which add bursts of citrus flavor and visual appeal.

  • 1 pound pappardelle cooked al dente
  • lemon juice and zest of 1
  • 1 lemon sliced into rounds
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt Celtic variety
  • 1 teaspoon black pepper fresh cracked
  • 4 oz butter
  • 6 cloves garlic minced
  • 1 cup cream
  • 1 cup parmesan

Instructions

  1. Cook papardelle pasta to al dente. Reserve 1 cup pasta water. 
  2. In a pan, combine butter and heat until foamy and melted. Stir in minced garlic. Cook until garlic is fragrant, about 45 seconds. 
  3. Pour in lemon juice, cup of reserved pasta water, Italian seasoning, salt, and pepper. Bring to a rapid boil, stirring occasionally.
  4. When rapidly boiling, remove from heat. Whisk in cream, stirring until combined. 
  5. Return to heat and stir in parmesan, whisking constantly to melt cheese into sauce. 
  6. When cheese has fully incorporated into sauce, and sauce has thickened, remove from heat and toss over pasta with lemon slices. 
  7. Serve and garnish with minced parsley and red pepper flakes, if desired.
