Creamy Mashed Potatoes

Ingredients

  • 4.5 lb potatoes any potato will work but I prefer russet (~2kg)
  • water for cooking the potatoes
  • 1 C chicken broth
  • 3 tablespoon salted butter
  • sea salt to taste

Instructions

  1. Wash, peel, and cut potatoes into small cubes.
  2. Place potatoes into a large pot, cover with water and bring up to a boil.
  3. Reduce reduce heat to simmer.
  4. Cook until potatoes are soft, about 35 minutes (test by piercing a fork through the potato -- it should have no resistance).
  5. Remove from heat and drain, keeping the potatoes in the pot.
  6. In a separate saucepot, add in chicken broth and bring to a boil.
  7. To the potatoes, add in the butter and half of the warmed chicken broth.
  8. Using a whisk, incorporate the chicken broth into the potatoes.
  9. When the potatoes clump up in the whisk, add more stock.
  10. Continue whisking and adding stock until the mixture is smooth and potatoes do not clump up in the whisk.
  11. Season with salt to taste.
