Creamy Mushroom Gnocchi

Creamy Mushroom Gnocchi combines tender potato gnocchi with a rich sauce made from butter, onion, garlic, sliced mushrooms, white wine, chicken broth, and heavy cream, finished with Parmesan and thyme. The sauce thickens beautifully with cornstarch, coating each gnocchi piece for a velvety texture and earthy flavor. This dish highlights mushrooms' savory qualities enhanced by wine and thyme, with Parmesan providing a subtle salty depth. It’s a satisfying meal that works well as a comforting main course.

Description

Creamy Mushroom Gnocchi features pillowy gnocchi cooked until just tender and then simmered briefly in a luscious sauce. The sauce starts with sautéed onion, garlic, and mushrooms cooked until tender to bring out their natural earthiness. Adding dry white wine adds a subtle acidity and complexity as it reduces nearly away. Combining chicken broth and heavy cream with thyme creates a smooth base, gently thickened with cornstarch. Parmesan cheese folds in at the end to add umami and richness. The gnocchi absorbs some sauce, resulting in a comforting and creamy dish.

The mushrooms' texture remains tender but intact, and the cream sauce clings to each gnocchi without overwhelming it. This recipe is suitable for a cozy weekday dinner or a weekend treat and pairs nicely with a simple green salad or steamed vegetables to balance the richness.

When cooking gnocchi, avoid rinsing after boiling to retain a bit of starch, helping the sauce adhere better. Mushrooms are best cleaned by brushing off debris rather than rinsing to keep their flavor concentrated. If preferred, mushroom broth can substitute for chicken broth to make the dish fully vegetarian.

  • Do not rinse or oil cooked gnocchi to keep starch that helps thicken and cling the sauce.
  • Clean mushrooms by brushing off dirt; avoid heavy rinsing to preserve mushroom flavor and cooking quality.
  • Use whole, halved, or sliced button, white, or brown mushrooms based on preference.
  • Chicken broth can be replaced with mushroom broth for a vegetarian version.
