Creamy Mushroom Pasta
Description
This Creamy Mushroom Pasta begins by cooking sliced mushrooms with butter, olive oil, minced garlic, freshly chopped parsley, oregano, salt, and optional hot pepper flakes. The mushrooms are cooked over low to medium heat with water added and covered to become tender while preserving their flavor and texture.
Concurrently, fettuccine pasta is boiled until al dente. Once the mushrooms are ready, heavy cream, all-purpose flour, and freshly grated Parmesan cheese are added to the pan, stirring until the sauce thickens to a smooth consistency—not too thick. The cooked pasta and some reserved pasta water are then added and tossed over high heat briefly to blend the sauce and pasta evenly.
The resulting dish features a creamy, savory sauce coating the noodles, punctuated by tender, flavorful mushrooms and herb notes from parsley and oregano. Parmesan adds a bright, salty finish, while the optional pepper flakes introduce a subtle warmth. It is served immediately with additional Parmesan cheese sprinkled on top.
Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1-2 cloves garlic minced
- 3-3½ cups mushroom sliced
- 1-2 tablespoons parsley freshly chopped
- ½ teaspoon oregano
- ¼ teaspoon salt or to taste
- 1-2 dashes hot pepper flakes optional
- 3 tablespoons water
- ½ cup heavy cream or whole or whipping cream
- ½ tablespoon all-purpose flour
- 2 tablespoons Parmesan Cheese freshly grated, plus extra for sprinkling
- 3 cups fettuccine cooked
Instructions
- In a large pan add the butter, olive oil and garlic, once the butter has melted add the sliced mushrooms, parsley, oregano, salt, hot pepper flakes and water. Cook covered on low/medium until the mushrooms are tender, stirring often, watch that they don't burn.
- While the mushrooms are cooking cook the pasta al dente in boiling salted water.
- Once the mushroom are cooked add the cream, flour and parmesan cheese, stir cooking until thickened (but not overly thick) add the pasta and 3-4 tablespoons pasta water, continue to toss on high heat for approximately 10 seconds, serve immediately sprinkled with parmesan cheese. Enjoy!
