Creamy Mushrooms on Toast

Creamy Mushrooms on Toast features a savory sauté of fresh mushrooms and minced onions cooked with butter and bacon, blended with melted gruyere cheese and sour cream for a rich texture. The mixture is gently cooked to develop a creamy consistency, then served over toasted bread, providing a warm and satisfying open-faced snack or light meal with earthy mushroom flavor and smooth cheese-enhanced creaminess.

Description

This recipe combines crispy bacon pieces sautéed with minced onion and fresh mushrooms to build a flavorful base. Butter helps develop a rich mouthfeel, while gruyere cheese melts into the mixture, adding a nutty, creamy layer. Sour cream or heavy cream is gently stirred in and cooked slowly to create a luscious creamy sauce coating the mushrooms.

The mushroom mixture is then served atop slices of toasted bread, offering contrasting textures of smooth, creamy mushroom topping and crisp toast. Fresh parsley and black pepper finish the dish with brightness and seasoning.

This preparation works well as a simple yet flavorful snack or light lunch. The use of melting cheese and cream makes the mushroom topping indulgent while the bacon enhances overall savoriness. The dish relies on gentle cooking to avoid tough mushrooms and maintain a creamy sauce consistency.

Ingredients

Servings
  • 3 lices Bacon
  • 1 yellow onion 2 cups, minced
  • 1 1/2 pounds mushroom chopped if large, fresh
  • 1/4 cup butter
  • 1/4 pound gruyere cheese see above for alternate cheeses, grated
  • 1/3 to 1/2 cup sour cream or a mix of both, or heavy cream
  • 1/4 cup parsley minced
  • black pepper to taste
  • 8 lices bread toasted

Instructions

  1. Cook the bacon in a pan over medium heat. Remove when crispy and chop. Maybe eat a piece.
  2. Add the minced onion and mushrooms and turn the heat to medium-high. Sauté until browned, adding butter if need be. This should take a solid 8 to 10 minutes.
  3. Stir in the cheese, and, when it's melted and stirred in, do the same for the cream and/or sour cream. Drop the heat to medium-low and cook gently with a cover on the pan for another 20 minutes or so. Mix in the parsley and black pepper, and serve on toast.

Notes

  • Any mushrooms that sauté well in butter are suitable for this recipe, allowing flexibility depending on availability and preference.
