Creamy Old Fashioned Caramel Candies are made by cooking sugar, corn syrup, butter, salt, and heavy cream to a soft crack stage, then cooled and cut into rich, tender squares. The recipe uses slow boiling and stirring to achieve deep caramel flavor and smooth texture ideal for homemade sweets.

Description

This traditional caramel candy recipe starts by combining granulated sugar, light corn syrup, butter, salt, and half the heavy cream in a pot, cooking while continuously whisking until boiling and the syrup dissolves. Gradually, the remaining cream is added and the mixture is slowly boiled over low heat until it reaches 248°F, the soft crack stage required for firm but chewy caramel.

After removing from heat, vanilla is stirred in before pouring the hot caramel into a prepared pan. The caramel is left to cool partially, then optionally topped with sea salt or drizzled with chocolate for added flavor contrast. It is then chilled in the refrigerator overnight for firm set.

Once fully chilled, the caramel slab is cut into squares. The candies have a creamy, rich texture with balanced sweetness and a hint of vanilla. This recipe uses the temperature method to control the doneness and softness of the caramels.

  • 2 cups granulated sugar
  • ¾ cup light corn syrup
  • ½ cup butter
  • 1 pinch salt if you use unsalted butter then use ¼ teaspoon
  • 2 cups heavy cream or whole or whipping cream, divided
  • 1 teaspoon vanilla

Instructions

  1. Line an 8 inch square cake pan with parchment paper, set aside.
  2. In a large non stick pot add the sugar, corn syrup, butter, salt and 1 cup of cream.  Cook stirring (whisking) continuously until syrup has dissolved and boils. Slowly add the remaining cream, mixing continuously and continue on a slow boil, over low heat until mixture reaches 248° F (this takes a while so don't be impatient).
  3. Remove the pot from the heat, add the vanilla and stir to combine. Immediately pour the mixture into the prepared pan, do not scrape the pot. Let the caramel cool in the pan for 30 minutes then sprinkle with sea salt or drizzle chocolate over it if desired. Cover the pan and refrigerate for 8 hours or overnight.
  4. Remove the caramel from the pan, cut into squares. Enjoy!
