Creamy Pasta Primavera

Ingredients

  • 2 ounce boxes macaroni and cheese Horizon White Cheddar brand, plus butter and milk according to package
  • 2 additional tablespoons butter Horizon Organic brand
  • 2 carrot diced
  • 1 zucchini diced
  • 1 yellow bell pepper diced
  • 15 grape tomatoes halved
  • ½ cup onion diced
  • 2 teaspoons garlic minced
  • ½ cup peas frozen
  • basil optional garnish; Horizon Organic shredded cheddar cheese
  • cheddar cheese optional garnish; Horizon Organic shredded cheddar cheese

Instructions

  1. Prepare both boxes of Cheesy Mac according to package instructions.
  2. Meanwhile, melt additional 2 tablespoons of butter in a large skillet over medium-high heat. Add carrots to the skillet and sauté for about 2 minutes. Add zucchini, bell pepper, tomatoes, onion, and garlic. Cook, stirring, about 1-2 more minutes, or until tender.
  3. Add the prepared mac and cheese to the skillet with the vegetables and toss to combine. Add the frozen peas to the hot skillet and stir until warmed through (about 1 minute). Garnish with fresh basil and shredded cheese, if desired.

Notes

  • Cooking for a smaller family? You can easily cut all of the ingredients in half (using just one box of Cheesy Mac), and prepare according to the instructions above.
  • Want to Prep Ahead? For even speedier last-minute prep, I like to chop all of the vegetables in advance and keep them in airtight containers in the refrigerator. When it's time to make dinner, the prep work is already done!
