Creamy Peach Popsicles

These fresh fruit popsicles only require a few basic ingredients! Dairy-free, vegan, and paleo friendly, these easy peach popsicles are an amazing summer dessert.

Ingredients

  • 3 peach 1.3 lbs, peeled and chopped, medium-sized
  • 1 coconut milk 15-oz can full-fat
  • ¼ cup pure maple syrup
  • 1 Tbsp lemon juice fresh
  • ½ tsp salt sea salt

Instructions

  1. Peel and the peaches, remove and discard the peach pits and chop the peaches into chunks.
  2. Place all of the ingredients for the popsicles (including the peach slices) in a high-powered blender or food processor and blend until the mixture is completely smooth.
  3. Taste the popsicle mixture for flavor and add more pure maple syrup or lemon juice to your personal taste.
  4. Pour mixture into your popsicle mold, filling the holes most of the way up. Secure the lid on the popsicle mold and insert the popsicle sticks. Freeze popsicles for 2 to 4 hours or until they have completely set up. The freeze time depends on the size of the popsicles and the temperature of the peach mixture going into the freezer.
  5. When you’re ready to eat the popsicles, thaw them at room temperature for a few minutes before pulling on them to release them from the mold. You can speed up this process by running warm water over the outside of the popsicle mold to help release the popsicles. 
  6. Store the popsicles in the popsicle mold in the freezer, or move them to a large zip lock bag or airtight container and keep frozen for up to 3 months. The popsicles will last even longer if you wrap them individually in plastic wrap before placing them in a freezer bag.

Notes

  • You can sweeten the popsicles with honey or sugar instead of pure maple syrup.
  • If you aren't dairy-free, you can replace the coconut milk with evaporated milk.
