Creamy Pesto Alfredo Sauce
Description
This sauce preparation starts by cooking pasta to al dente and reserving some pasta water to adjust sauce consistency. On the stovetop, olive oil is heated and diced onions are sautéed until soft. Garlic or Brazilian-style sofrito is added and cooked briefly to release fragrance without browning.
Cream and white wine are added next and allowed to simmer before stirring in pesto. Adding reserved pasta water loosens the sauce for coating. Cooked pasta is combined in the skillet with the sauce and parmesan cheese is stirred in until melted and thickened. Freshly ground salt and pepper are added to taste. The dish is served garnished with extra Parmesan and fresh basil if desired.
This sauce offers an alternative to traditional alfredo by incorporating the herbal depth of pesto with classic creamy elements, making it suitable for an herb-forward pasta dish with a creamy mouthfeel.
Ingredients
- 1 tablespoon olive oil
- 1/2 cup onion diced
- 1.5 cups cream
- 1 cup Parmesan Cheese plus more for serving, freshly grated
- 1/2 cup white wine
- 1/2 cup pasta water
- 1 tablespoon sofrito or 3 cloves of garlic minced, Brazilian style
- 1/2 cup pesto
- 1 pound pasta
- salt to taste
- black pepper to taste
- basil Optional for garnish, fresh
Instructions
- Start by cooking the pasta al dente, according to the instructions of the package - once the pasta is almost done cooking, take out about a half a cup of pasta water, and set aside. You need this for the sauce, so do not discard it.
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onions to the skillet, and sautee until soft, about 2-3 minutes.
- Next, add in the Brazilian sofrito, or the garlic, and sautee until fragrant. You do not want these to brown.
- Add in the cream and the wine. Stir to combine before adding the pesto and stirring again. Let it simmer.
- Pour in the pasta water, and stir.
- Add the al dente pasta to the pan, then add in the cheese. Stir until the pasta is coated in the sauce and the cheese has melted into it.
- Serve with parmesan and fresh basil.
