Creamy Pineapple Pie

Creamy Pineapple Pie features a fresh pineapple cooked with sugar and lemon juice to create a bright filling thickened with potato or corn starch and coconut milk. The filling is poured into a premade pie crust, topped with a second crust, and baked to golden perfection. The result is a tropical-flavored cream pie showcasing pineapple’s natural sweetness balanced by citrus and creamy coconut milk texture.

Description

This Creamy Pineapple Pie recipe begins by processing fresh pineapple into small pieces and cooking it with sugar and lemon juice over medium heat. Coconut milk mixed with cornstarch acts as a thickener contributing to the creamy consistency of the filling. The mixture is simmered gently for 15 to 20 minutes to allow flavors to develop and thicken.

Additional starch dissolved in water is added to boost thickening if needed. After simmering, the filling rests to cool and further thicken before being poured into a premade 9-inch pie crust. The pie is covered with a second crust with slits cut in the top to release steam during baking. Baking occurs at 425°F for 35 to 40 minutes until the crust is golden brown.

The pie offers a creamy, sweet tropical filling with a texture somewhere between a custard and fruit pie, owing to the coconut milk and starch combination. The lemon juice brings brightness that balances the sugar and pineapple’s natural sweetness. After baking, the pie should be fully cooled before serving to allow the filling to set properly.

Adjust sugar amounts depending on the sweetness of your pineapple to avoid overly sweet pies. Cutting slits in the top crust is important to prevent sogginess and ensure even baking. This pie can be served as a refreshing dessert showcasing pineapple’s flavors in cream form.

Ingredients

Servings
  • 1 large pineapple fresh
  • ¾ cup sugar
  • 1 lemon juiced
  • ¼ cup potato starch or corn starch, divided
  • 1 coconut milk lower fat, canned
  • cup of water
  • 2 pie crust premade, 9-inch

Instructions

  1. Preheat oven to 425 degrees F
  2. Remove the skin and cut it into chunks. Add the pineapple to your food processor and process it until broken down.
  3. In a large saucepan over medium heat, add the pineapple, sugar, and lemon juice.
  4. Dissolve the ¼ cup of corn starch in the coconut milk. Add to the pineapple mixture. Bring to a boil and reduce heat, simmer on low for 15-20 minutes. Mix the other 2 tbs of starch in water. Use the extra starch mixture to thicken the mixture.
  5. Allow the mixture to sit for 20 to 30 minutes before adding to the premade crust.
  6. Add the mixture to the pie crust and cover with the second crust. Cut a few slits across the top for steam to release.
  7. Cook for 35 to 40 minutes. Allow to cool completely before serving.

Notes

  • Adjust sugar quantity according to the natural sweetness of the pineapple used.
  • If using a topped pie crust, be sure to cut slits in the top crust to allow steam to escape during baking.
