Creamy Sausage and Potato Soup
Description
This soup begins by browning slices of Italian chicken sausage in olive oil to develop savory flavor and color. The sausage is then removed to make room for diced onion, celery, and carrot sautéed until softened. These vegetables build flavor alongside seasoning with salt, oregano, and basil. Tomato paste is incorporated for acidity and depth.
Chicken broth, water, peeled and cubed russet potatoes, and the browned sausage are added and brought to a boil. The soup is simmered covered for about 30 minutes until the potatoes become tender. A portion of the broth is tempered with heavy cream before mixing it back into the soup to prevent curdling and enrich the broth with creaminess.
This soup is a filling entrée suitable for colder days, pairing well with crusty bread. The hearty sausage provides protein, while the vegetables and cream create a smooth, comforting texture. Season to taste before serving for a balanced flavor profile.
Ingredients
- 1 lb Italian chicken sausage mild or hot
- 1 tbsp olive oil
- 2 lb russet potato peeled and cubed
- 1 yellow onion diced
- 1 cup celery diced
- 1 cup carrot diced
- 2 tsp salt
- 1 tsp oregano dried
- 1 tsp basil dried
- ¼ cup tomato paste
- 1 qt chicken broth (4 cups)
- 2 cups water
- ½ cup heavy cream
Instructions
- Cut sausage links into rounds. Heat oil in pot over medium heat. Add sausage to the pot to brown for 5-7 minutes tossing frequently
- Remove sausage from pot and add onion, celery and carrot - add more oil if needed. Saute veggies for about 5 minutes over medium heat. Add salt, oregano and basil and saute for another minute.
- Mix the tomato paste in with the veggies. Then, mix in the chicken broth, water, potatoes and browned sausage. Bring the soup to a boil.
- Reduce heat to a simmer, cover and simmer for about 30 minutes - potatoes should be tender.
- Take ½ cup of broth out of the pot and slowly mix with the heavy cream - this prevents curdling. Pour this mixture back into the pot and stir. Taste and season with salt and pepper as needed.
