Creamy Sausage Gnocchi
Description
The recipe starts by breaking up and browning pork sausage in olive oil, then setting it aside. On low heat, diced onion and crushed garlic are softened in the sausage pan to build flavor. Gnocchi are added briefly before pouring in chicken stock, Italian seasoning, crème fraîche, and sun-dried tomatoes to create a creamy, flavorful sauce.
After simmering a few minutes to meld the flavors and cook the gnocchi, the cooked sausage, spinach, and grated parmesan are stirred in. The heat is maintained for a short period to wilt the spinach and melt the cheese, completing a balanced texture and taste. The parmesan adds a salty finish while the sun-dried tomatoes contribute subtle sweetness and acidity.
This dish is suited for an effortless weeknight dinner or lunch, providing a filling yet nuanced flavor profile. It can be garnished with extra parmesan or fresh basil to brighten the dish. Optional additions such as red chili flakes or spicy sausage varieties can add heat according to preference, and pasta can substitute for gnocchi if desired.

Ingredients
- 1 tablespoon olive oil
- 400 g pork sausages
- 0.5 onion finely diced
- 2 garlic crushed, cloves
- 500 g gnocchi
- 400 ml chicken stock
- 1 teaspoon Italian seasoning
- 200 ml crème fraîche
- 60 g sun-dried tomatoes
- 100 g spinach finely chopped
- 30 g parmesan grated
Instructions
- Heat 1 tablespoon Olive oil in a large pan over a medium heat. Squeeze the sausage meat out of 400 g Pork sausages and add it to the pan. Break the meat up with a wooden spoon and cook for 5-6 minutes.
- Once cooked remove from the pan and set aside.
- Reduce the heat to low and add 0.5 Onion and 2 Garlic cloves to the pan and cook until softened, about 4 minutes.
- Add 500 g Gnocchi to the pan and cook for a further minute.
- Add 400 ml Chicken stock, 1 teaspoon Italian seasoning, 200 ml Creme fraiche and 60 g Sun-dried tomatoes to the pan. Continue cooking for 3 minutes.
- Add the cooked sausage, 100 g Spinach and 30 g Parmesan to the pan.
- Cook for a further 3 minutes and then serve. Top with extra Parmesan (optional).
Notes
- Sprinkle fresh basil atop the gnocchi just before serving to add a fresh herbal note.
- Include red chili flakes with the chicken stock for a spicy variation.
- Substitute spicy sausage for pork sausage to increase heat.
- You may replace gnocchi with your favorite pasta, cooking it separately before mixing it into the sauce.
- If chicken stock is unavailable, water works as a substitute though it will be less flavorful.
