Description
Creamy Smoked Salmon and Dill Pasta combines cooked linguine with a sauce of heavy cream and butter, melted and warmed carefully before adding chopped smoked salmon, parmesan cheese, and fresh dill. The heat from the sauce gently cooks the salmon to retain moisture and smoky taste. The sauce is seasoned with salt and black pepper to enhance the overall flavors. The pasta absorbs some cooking water to help the sauce cling to the strands, resulting in a luscious coating.
The dish is plated with ribbons of smoked salmon laid on top, adding a textural contrast to the rough chopped salmon in the sauce. Generous parmesan and dill garnish enhance both flavor and appearance. This pasta is suitable as a main course dinner pairing well with white wine.
Freezing is not recommended for this prepared dish, though the recipe states chicken used elsewhere can be frozen. The overall preparation focuses on fresh ingredients and gentle cooking to preserve delicate flavors.
Ingredients
- 300 g linguine (or any other pasta shape)
- 200 g smoked salmon (half cut into ribbons and half chopped)
- 50 g parmesan finely grated
- 30 g dill finely chopped
- 300 ml cream heavy cream, double
- 25 g butter
- salt
- black pepper
Instructions
- Cook the pasta according to packet instructions / your own preferences.
- Slice half the smoked salmon into ribbons and chop half into rough pieces, grate the parmesan and chop the dill.
- Place the cream and butter in a pan and gently melt the butter and bring the sauce just up to the boil then turn off.
- Add the roughly chopped salmon (not the ribbons) and half the parmesan and dill plus some salt and pepper to the sauce and stir. The salmon will gently cook in the heat of the cream.
- When the pasta is cooked, drain it and add it to the sauce along with a couple of tablespoons of cooking water.
- Divide the pasta and sauce between the plates and lay over the remaining salmon ribbons. Sprinkle with lots of parmesan and dill and serve with a glass of white wine.
Notes
- This pasta dish is not suitable for freezing once assembled; prepare fresh for best texture and flavor.
