Description

This recipe starts by sautéing smoked sausage slices and diced onions in olive oil until the onions soften and the sausage browns lightly. Garlic is added briefly to release flavor. Bow tie pasta is then combined with diced tomatoes, chicken stock, and cream to create a creamy, tomato-enriched cooking liquid. The mixture is brought to a boil and then simmered covered until the pasta is tender and has absorbed much of the flavorful sauce.

Removing the pan from heat, grated cheddar cheese is stirred in to melt smoothly, thickening the sauce and adding richness. Allowing the dish to rest covered helps the cheese fully melt and blend with the sauce. The result is a creamy pasta loaded with smoky, savory sausage flavor. A sprinkle of sliced green onions adds color and a fresh, mild bite that complements the richness.

  • 1 lb smoked sausage sliced, rope shape
  • 2 tablespoons olive oil
  • 1 cup onion diced
  • 4 teaspoons garlic minced, about 4 cloves
  • 8 ounces bow tie pasta
  • 14 ounces diced tomatoes
  • 2 cups chicken stock
  • 1/2 cup heavy cream or half and half, or milk
  • 1/2 teaspoon black pepper cracked
  • 1 teaspoon salt
  • 1.5 cups cheddar cheese grated
  • 2 tablespoons green onions sliced

Instructions

Get prepped

  1. Dice your onion, slice your sausage, mince your garlic and open the can of tomatoes. Cut your green onions.

Cook the onions, garlic and brown the sausage

  1. Heat the olive oil in a large skillet or dutch oven over medium-high heat.
  2. Add the sliced sausage and the diced onion. Cook until the onion begins to soften - 1-2 minutes.
  3. Add the garlic, and cook for 30 seconds.

Add pasta tomatoes and stock

  1. Add the pasta, tomatoes, and stock and cream.
  2. Bring to a boil, then cover and simmer over a low heat for 15 minutes. 
  3. Remove from the heat stir through the cheese.
  4. Replace the lid and allow to sit 5 minutes, so the cheese melts. 

Serve

  1. Stir well, and scoop into bowls.
  2. Garnish with green onions if you wish.
  3. Devour.

Notes

  • Milk or half and half can substitute for heavy cream, but adding cream cheese helps thicken the sauce.
  • Check pasta doneness by tasting for firm but cooked texture (al dente).
  • Any fully cooked sausage works well as a substitute for smoked sausage.
  • The recipe can be doubled or more to serve larger groups or for leftovers.
