Creamy Strawberry Shortcake Dip
Description
This dip starts by blending cream cheese, sour cream, vanilla extract, and powdered sugar until smooth. Then whipped topping is folded in to lighten the mixture. Fresh diced strawberries are gently mixed in, leaving some on top for appearance. Strawberry ice cream topping is drizzled and folded through to intensify the berry flavor and add a slightly syrupy texture.
Served chilled, the dip offers creamy sweetness punctuated by soft strawberry pieces and topped with a glossy fruit sauce. It’s well suited for parties or casual gatherings where guests can dip with a mix of cookies, crackers, or fresh fruit, balancing creamy, tangy, and fruity notes.
The dip stores well under plastic wrap in the refrigerator for several days. Using softer strawberries in the mix and firmer ones for dipping maximizes texture contrast. Adding graham cracker crumbs on top enhances the dessert-like quality if desired.
Ingredients
- 8 ounces cream cheese (softened at room temperature)
- ½ cup sour cream
- 1 tsp vanilla extract
- ½ cup powdered sugar
- 8 ounces whipped topping thawed, frozen
- ½ cup strawberries diced, fresh
- 3 TBS strawberry ice cream topping
- assorted dipping items (strawberries, cookies, graham crackers, etc.)
Instructions
- Combine cream cheese, sour cream, vanilla extract, and powdered sugar in a large mixing bowl and beat until smooth.
- Fold the whipped topping into the cream cheese mixture until fully incorporated.
- Add almost all the chopped strawberries and mix just enough to evenly distribute the strawberries throughout the mixture. Then add the rest of the strawberries right on top.
- To finish it off, generously drizzle strawberry ice cream topping over the dip and gently fold it into the mixture. Then finish it off with one final drizzle of the ice cream topping.
- Serve with your favorite dipping treats such as cookies, graham crackers, whole strawberries, or pretzels.
Notes
- Refrigerate leftovers covered for up to five days; discard after to ensure freshness.
- Use softer strawberries chopped into the dip for flavor and the firmer ones for dipping to maintain texture contrast.
- Optional: Add graham cracker crumbs on top to introduce a sweet, crunchy element resembling strawberry cheesecake.
- For a different texture, try substituting stabilized whipped cream in place of whipped topping.
