Creamy Tomato Chicken and Chorizo Pasta features thinly sliced or crumbled chorizo cooked with onion and red and yellow bell peppers. After these ingredients soften, cubed chicken breasts are added and lightly browned for a tender bite. Garlic enriches the aroma just before canned chopped tomatoes, Italian seasoning, sugar, salt, and optional smoked paprika combine to form a rich, simmered sauce. The sauce gently cooks while the pasta boils, absorbing the flavors.

Once pasta is cooked and reserved, it is mixed with the cream and fresh spinach stirred into the sauce, adding creaminess and a bright vegetable note. Parmesan cheese and flat-leaf parsley garnish the plated dish, complementing the creamy texture and savory flavors.   • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 bell pepper chopped (see note 2, red
  • 1 yellow bell pepper chopped (see note 2)
  • 2 chicken breast cubed
  • 4 cloves garlic crushed
  • 1 can tomato 14oz/400g sized can, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon sugar
  • ¼ teaspoon salt
  • ¼ teaspoon smoked paprika optional
  • 14 oz pasta (see note 3)
  • 1 tablespoon salt
  • 1 cup heavy cream
  • 1 cup spinach fresh

To serve

  • parmesan
  • flat-leaf parsley

Instructions

  1. Slice or crumble the chorizo.5.5 oz / 150 g chorizo
  2. Heat the olive oil in large frying pan over high heat, add the chorizo and cook for 2 minutes.1 tbsp olive oil
  3. Add the chopped onion and peppers and cook for another 2–3 minutes, stirring occasionally.1 onion1 red bell peppers1 yellow bell pepper
  4. Add the chicken to the pan and stir around in the oil for 1-2 minutes until lightly golden. Add in the garlic and stir together until aromatic (less than 1 minute)2 chicken breasts4 cloves / 4 garlic, crushed
  5. Add the chopped tomatoes, Italian seasoning, sugar, salt, and smoked paprika (if using).1 can chopped tomatoes 1 tsp Italian seasoning1 tsp sugar¼ tsp / ¼ teaspoon salt¼ tsp / ¼ teaspoon smoked paprika
  6. Bring the sauce to a simmer and then cook gently on the lowest heat while you cook the pasta.
  7. Bring a large pan of water to a boil. Add the salt. Then add the pasta.1 tablespoon salt14 oz / 400 g pasta
  8. Cook the pasta as per the packet instructions. Then reserve a cup of the pasta cooking liquid and drain the pasta.
  9. Add the pasta to the tomato sauce mixture and pour in the heavy cream. Turn the heat to medium.1 cup / 250 ml heavy cream
  10. Stir everything together until well coated, thinning the sauce with pasta water as needed.
  11. Stir through the fresh spinach and allow to wilt. Serve immediately with parmesan and chopped parsley.1 cup fresh spinach parmesan flat-leaf parsley

Notes

  • Firm cured Spanish chorizo provides more flavor, but soft Mexican chorizo also works.
  • Select bell pepper colors based on preference; red and yellow are sweeter, green adds a different note.
  • Use your preferred pasta shape; penne, rigatoni, spiralli, or spaghetti all suit this recipe.
