Creamy Tuscan Sausage Gnocchi

Creamy Tuscan Sausage Gnocchi features Italian sausage cooked with garlic and crushed red pepper, simmered with chicken broth, cream, sun-dried tomatoes, and uncooked potato gnocchi. Fresh spinach and Parmesan finish the dish, resulting in a rich, velvety sauce that cooks the gnocchi directly, combining savory, tangy, and slightly spicy flavors.

Description

This recipe begins by browning Italian sausage seasoned with crushed red pepper flakes, creating a spicy and savory base. Garlic adds aromatic depth before liquids—chicken broth and heavy cream—are added along with fresh lemon juice for brightness and sun-dried tomatoes for concentrated tanginess.

Uncooked potato gnocchi are stirred in and simmered covered, allowing the gnocchi to cook in the sauce, which thickens due to the starch released. Fresh baby spinach is tossed in near the end, wilting into the creamy mix, followed by freshly grated Parmesan cheese that melts and enriches the sauce with a salty, nutty character.

The dish offers soft gnocchi enveloped in a luscious, creamy tomato-infused sauce with layers of savory sausage and bright greens. It should be served immediately to enjoy the contrast of textures and flavors at their best.

  • ¾ cup heavy cream
  • 1 tsp lemon juice fresh
  • ¼ cup sun-dried tomatoes *If using jarred sun-dried tomatoes in oil, make sure to drain the oil before adding!!!
  • 1 lb potato gnocchi dry, uncooked
  • cups spinach fresh baby
  • ¼ cup Parmesan Cheese finely grated
  • salt sea salt and freshly cracked, to taste

Instructions

  1. Cook the ground sausage and a pinch of crushed red pepper flakes in a large skillet over medium-high heat, breaking it up as you go, until browned, about 6-7 minutes.
  2. Add the garlic and cook, stirring constantly, for 1 minute.
  3. Add the chicken broth, heavy cream, fresh lemon juice, sun-dried tomatoes, and uncooked gnocchi; stir to mix well then cover with a lid and cook for 5 minutes.  Side Note: The gnocchi will cook in the sauce and the starch from the potatoes will thicken the sauce.

  5. Taste and season with sea salt and freshly cracked pepper, to taste if needed.
  6. Serve immediately. Enjoy.
