  1. Mix the cornstarch and sugar: In a small bowl, combine the cornstarch and granulated sugar. This helps prevent lumps when you add it to the cream.
  2. Heat the cream: In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.
  3. Whisk in the sugar mixture: Gradually add the sugar and cornstarch mixture to the warm cream, whisking constantly to avoid clumps. Continue to whisk until the sauce begins to thicken, about 2-3 minutes.
  4. Add the butter: Once the sauce thickens, lower the heat and whisk in the butter, allowing it to melt completely into the sauce.
  5. Add the vanilla: Remove the saucepan from heat and stir in the vanilla extract (or almond extract for a twist).
  6. Cool slightly and serve: Let the sauce cool slightly before serving. It will thicken a bit more as it cools.
