Crepe Recipe

This Crepe Recipe blends flour, sugar, salt, milk, eggs, and melted butter into a smooth, thin batter cooked in a nonstick skillet to create delicate French-style pancakes. The crepes develop golden brown undersides and crisp edges with tender centers, ideal for sweet or savory fillings.

Description

The batter is combined in a blender or whisked until smooth, with bubbles forming on top, indicating it is well-aerated. Cooking a thin layer (approximately 8 inches in diameter) in a lightly buttered skillet produces a crepe that cooks evenly with golden undersides and crisp edges. After flipping, it cooks an additional minute to finish the other side without drying out.

These crepes are versatile and can be served folded with toppings such as powdered sugar, maple syrup, Nutella, or chocolate sauce. Fresh berries can be added for added texture and flavor contrast.

Preparing the crepes ahead and stacking them separated by wax paper or foil allows convenient storage in the refrigerator for up to three days, making meal planning easier. Reheat gently before serving to maintain softness.

Ingredients

Servings
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups milk whole
  • 4 large egg
  • 4 tablespoons butter melted, unsalted

Instructions

  1. In a blender, combine the flour, sugar, salt, milk, eggs, and butter. If you don't have a blender, mix everything together using a whisk. Purée until the mixture is smooth and bubbles form on top, about 30 seconds.
  2. Heat a 12-inch (30 cm) nonstick skillet or pan over medium heat. Lightly coat it with butter. Add 1/3 cup of batter and swirl it to completely cover the bottom of the skillet; the crepe should be about 8 inches (20 cm) in diameter.
  3. Cook until the underside of the crepe is golden brown and the edges are crispy, about 2 to 3 minutes.
  4. Loosen the edge of the crepe with a rubber spatula and quickly flip it over. Cook for 1 minute. Slide the crepe out of the skillet and repeat with the remaining batter, coating the pan with butter as needed.
  5. Fold the crepes over and serve immediately with powdered sugar, maple syrup, Nutella, or chocolate sauce. Add berries of your choice, if desired.

Notes

  • Crepes can be made ahead and refrigerated up to three days when stacked with wax paper or foil between layers to prevent sticking.
  • If you don't have a blender, whisk the batter thoroughly until smooth and slightly aerated.
  • Serve with toppings like powdered sugar, maple syrup, Nutella, chocolate sauce, or fresh berries as preferred.
