- 9 ounces okra
- 3/4 cup panko breadcrumbs gluten free

- Preheat the air fryer to 350 F / 180 C.
- Wash the okra and pat dry.
- Remove the ends of the okra, but do not cut into it.
- In a bowl, beat the egg.
- In a separate bowl, mix the panko breadcrumbs, paprika, oregano, coriander and salt.
- Then, dip the okra into the egg wash and let some of the excess drip off.
- next dip the okra into the panko mixture, turning over until well coated. Set coated okra aside on a tray or plate and continue until done.
- Place okra in a single layer inside the air fryer basket and cook for 5-6 mins per side. Use tongs to turn and cook for an additional 5-6 mins until done (bigger and tougher okra may take a little longer).

- Ensure enough space between okra pieces in the air fryer basket to maintain crispiness; cook in batches if necessary.
- Coat and cook the okra promptly to avoid sogginess from sitting in the breading.
