Ingredients
- 4 cod fillets, about 6 ounces each
- 4 tablespoons butter salted
- ½ cup all-purpose flour
- ½ cup cornmeal
- 1 tablespoon seasoned salt

- ¼ teaspoon black pepper

Instructions
- Preheat oven to 450 degrees F. Add the butter to an 11 x 7-inch baking dish (or another similar size dish that easily holds all of your fillets). Place the dish in the hot oven, just until the butter melts (it will only take a few minutes).
- In a shallow dish, combine flour, cornmeal, seasoned salt, garlic powder and pepper. Dredge the fish in the flour mixture to coat on all sides, shake off excess breading, and place in the hot dish. Very carefully turn the fish to coat with butter. You can also use a spoon to drizzle the melted butter over the top of the fish.
- Bake for 7-8 minutes. Turn the broiler to HIGH and broil the fish for 1-2 more minutes, until the top of the fish is crispy and flakes easily with a fork. Keep a close eye on the fish while it’s under the broiler to make sure that it doesn’t burn.
- Squeeze fresh lemon juice over the fish and sprinkle with parsley just before serving.
AIR FRYER METHOD:
- Preheat an air fryer to 400 degrees F. In a shallow dish, combine flour, cornmeal, seasoned salt, garlic powder and pepper. Dredge the fish in the flour mixture.
- Spray the basket of the air fryer with olive oil cooking spray. Working in batches, arrange cod in the basket, leaving space between each piece so air can circulate. Spray the top of each piece of cod with olive oil spray.
- Cook for 10-12 minutes, carefully flipping halfway through. The fish is done when it’s crispy and flakes easily with a fork.
- Squeeze fresh lemon juice over the fish and sprinkle with parsley just before serving.
Notes
- Halve ingredients to prepare only two fillets while keeping the preparation method unchanged.
- For fried fish sandwiches, serve fillets on hoagie rolls with lettuce, tomato, and tartar sauce.
- Fish tacos can be made by adding fillets to tortillas with salsa and guacamole.
- Add cayenne pepper to the breading mixture for a spicier crust.
- For a Parmesan variation, include grated Parmesan cheese in the breading.
- To use an air fryer, skip melted butter and spray fillets with olive oil, cooking at 400°F as indicated.
