Crispy Bean and Cheese Burritos
Description
The Crispy Bean and Cheese Burritos recipe uses refried beans combined with salsa and spices such as chili powder, garlic powder, and cumin to create a flavorful filling. Shredded Mexican blend cheese adds a rich, melty element. Once rolled tightly in medium flour tortillas, the burritos are pan-fried in a small amount of oil. Turning them frequently allows an even golden and crispy crust to form all around.
This approach results in burritos that have a pleasantly crunchy shell with a warm, soft interior of beans and cheese. The cooking method focuses on crisping the tortillas rather than baking, providing a distinct texture and flavor layer. The included spices contribute a subtle savory heat without overpowering the beans.
These burritos can be served warm with fresh salsa and guacamole for dipping, making them a filling snack or casual meal. The recipe supports preparing the bean mixture or assembled burritos ahead of time, helping with meal planning. Adaptations like gluten-free tortillas or air fryer cooking are provided to suit dietary preferences and kitchen equipment.
The notes highlight storing the bean mixture in the refrigerator before assembly, freezing burritos before frying, and reheating leftovers to restore crispness. Using an air fryer at 370°F is suggested as an alternative cooking method for convenience and even crisping. These tips make the recipe flexible and easier to fit into different cooking routines.
Ingredients
- 16 ounce can refried beans , pinto or black
- 1 Tablespoon salsa
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin ground
- 1/2 cup Mexican blend cheese or cheddar cheese, shredded
- 6 medium flour tortillas
- salsa , for dipping
Instructions
- Add the refried beans, salsa, chili powder, garlic powder and cumin to a mixing bowl and stir until smooth.
- Spoon about three tablespoons of the bean mixture onto the center of a flour tortilla and smooth into a thin layer.
- Sprinkle with a small handful of shredded cheese. Roll tightly. Repeat with remaining tortillas.
- Heat 1-2 tablespoons of oil in a large saucepan over medium-high heat. Place a few burritos, seam side down, into the pan.
- Turn them every 30 seconds or so as they cook until they are golden and crispy on all sides.
- Serve warm, with homemade five-minute salsa and guacamole, for dipping.
Notes
- The refried bean mixture can be made in advance and stored in an airtight container in the refrigerator.
- Assembled burritos can be refrigerated until ready to cook or frozen for longer storage; thaw completely before frying.
- Leftover burritos reheat well when pan-fried to regain crispness.
- Air fryer can be used by spraying burritos with oil and cooking at 370°F for approximately 6-8 minutes, turning once.
- Use gluten-free tortillas to adapt the recipe for gluten intolerance.
