Crispy Chocolate Oatmeal Cookies

Crispy Chocolate Oatmeal Cookies combine old fashioned oats, crisp Rice Krispies cereal, and chocolate chips in a buttery, sweet dough that bakes to golden, crunchy edges. The addition of baking powder and baking soda ensures light texture, while vanilla and brown sugar enhance flavor depth. These cookies offer a satisfying crunch with pockets of melted chocolate, suitable as a treat or snack.

Description

This cookie recipe starts by whisking together dry ingredients including flour, salt, baking powder, and baking soda. Separately, softened butter is creamed with brown and granulated sugars before adding egg and vanilla extract. Dry ingredients are gradually incorporated, and oats, chocolate chips, and Rice Krispies cereal are folded in gently to preserve cereal texture.

Dough scoops are placed on prepared baking sheets and baked at 375°F for 10-12 minutes until edges turn golden. Cooling briefly on the cookie sheet helps set the cookies before transferring to a rack. The resulting cookies have a crisp bite with the contrasting crunch of cereal and chewy oats, complemented by melted chocolate chips throughout.

The combination of oats and Rice Krispies gives these cookies a unique crispness compared to traditional oatmeal cookies, making them a distinct, textural treat.

Ingredients

Servings
  • 1 cup all-purpose flour
  • 1/4 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 egg
  • 1 tsp. vanilla
  • 1 cup old fashioned oats
  • 1 1/4 cups Rice Krispies cereal
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 375 degrees. In a medium bowl, whisk together the flour, salt, baking powder, and baking soda. Combine butter and sugars in your mixing bowl. Beat until smooth. On low, add in egg and vanilla extract. Beat until combined.
  2. Slowly add in the dry ingredients. Stir in the oats, chocolate chips, and cereal. Don't over mix. You don't want to crush the cereal too much.
  3. Scoop dough into balls and place on a cookie sheet lined with Silpats or parchment. Bake for 10-12 minutes! Allow to cool for a minute on the cookie sheet. Move to a cooling rack and enjoy.
