Crispy Dumpling Skirt

This recipe creates a decorative and crispy dumpling skirt by cooking dumplings with a flour and cornstarch mixture. The result is a golden, lace-like crust that holds the dumplings together and adds extra crunch. It works with fresh or frozen dumplings arranged in a shape before cooking and steaming to finish.

Description

The Crispy Dumpling Skirt begins by arranging dumplings in a pan coated with olive oil. The dumplings cook on medium-high heat until the bottoms start browning, about 2 to 3 minutes for fresh and slightly longer for frozen. A mixture of water, flour, cornstarch, and salt is then poured evenly into the pan. Covered and cooked on low heat, the mixture steams and forms a thin, crisp lace around and beneath the dumplings as the water evaporates.

Once the water has cooked off, the lid is removed, and the pan is swirled to crisp any soft spots in the starch lace. After achieving a golden crust, excess oil can be drained before carefully flipping the dumplings onto a plate, showcasing the crispy skirt as a flavorful and textural accent. This technique enhances plain dumplings with an attractive and crunchy presentation.

  • 10 dumplings or more, fresh or frozen
  • cup water
  • 1 tsp all-purpose flour
  • 1⅓ tsp cornstarch
  • 1 pinch salt
  • 2 tbsp olive oil

Instructions

  1. Over medium high heat, add olive oil to the pan and swirl it around to fully coat. Line up the dumplings in your pan, however you would like for them to be presented. I went with a star shape.
  2. Cook the dumplings for about 2 to 3 minutes if they are fresh. If you use frozen dumplings, add an extra 2 minutes to the cooking time.
  3. Mix the water, flour, cornstarch, and salt together and carefully add it to the pan. Try to pour the mixture on as evenly as possible. The oil may splatter so be careful.
  4. Lower the heat to low, place the lid onto the pan, and allow the mixture to cook for another 6 to 8 minutes or until the water has evaporated.
  5. Remove the lid and swirl the pan to get the oil to any parts of the lace that needs extra crisping up.
  6. Once the lace has become golden, turn off the heat. Carefully drain any excessive oil if needed and then place a plate over top of the dumplings. Keeping your hand on the plate, use your other hand to flip the pan over to get the crispy dumplings onto the plate, skirt side-up.
