Crispy Leftover Pasta

This recipe transforms leftover pasta and tomato sauce into a crispy skillet dish using extra virgin olive oil. By frying the pasta over medium-high heat and occasionally turning it, the pasta develops golden, crunchy edges while maintaining soft areas. The method revives pasta with a pleasant texture contrast, ideal for using leftovers creatively.

Description

Crispy Leftover Pasta involves frying a bowlful of cooked pasta mixed with leftover tomato sauce in a nonstick pan with extra virgin olive oil over medium-high heat. Adding olive oil on top of the pasta aids in crisping the surface as it sizzles. Turning the pasta occasionally controls the extent of crispiness, allowing for a balance between crunchy edges and tender portions.

The dish uses simple ingredients and requires minimal active cooking time. It offers a different texture from freshly boiled pasta by introducing browned, crisp pieces. This approach helps reduce food waste by reviving leftover pasta in an enjoyable form.

Oil quantity can be adjusted if the pasta appears dry or sticks to the pan. The method works with most pasta types, and personal preference guides how long to cook for crispness.

Ingredients

Servings
  • 1 bowlful pasta leftover
  • 1 bowlful tomato sauce leftover
  • 1 Tbsp extra virgin olive oil or more if needed

Instructions

  1. Pour some extra virgin olive oil into a nonstick frying pan, or wok, over medium high heat, and add the pasta (for this much pasta, use about 2 tbsp).
  2. Add a little more oil over the top of the pasta, and let it begin to sizzle for a few minutes before stirring it. Every now and then, turn the pasta; depending on how crispy you want it, leave it longer without turning it for a crispier result.
  3. It's ready when it's hot, so it's a matter of taste to decide when to stop cooking it. I love it very crispy, so I let it cook longer. (It is excellent most any kind of pasta.)

Notes

  • Add extra olive oil if the pasta sticks to the pan or seems dry while frying.
