Ingredients

  • 2 pounds potatoes halved or quartered, small yellow or red
  • 2 tablespoons olive oil
  • 2 garlic minced (or 1 teaspoon of garlic powder, cloves
  • 3 tablespoons fresh herbs finely chopped (any combination you have on hand: rosemary, parsley, thyme, basil, oregano, or marjoram)
  • sea salt coarse, to taste
  • black pepper coarse, to taste
  • paprika optional, 1/4 teaspoon, or red chili flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl (or straight on the baking sheet*), toss the halved or quartered potatoes with olive oil until they are evenly coated.
  3. Add minced garlic and chopped fresh herbs of your choice to the potatoes. Toss again to distribute the flavors.
  4. Season the potatoes with coarse salt and pepper according to your taste preferences. Mix well.
  5. Spread the seasoned potatoes on a baking sheet or in a large baking dish, in a single layer for even roasting.
  6. Roast the potatoes in the oven for 20-30 minutes or until they turn golden brown and crispy. Keep an eye on them and stir halfway through to ensure even cooking.
  7. Once the potatoes are golden and crispy, remove them from the oven.
  8. Serve the crispy oven-roasted potatoes hot as a delicious side dish.

Notes

  • *if using a baking sheet, you can use parchment paper, but it will slightly steam the potatoes rather than great crispy potatoes.
