Description

This Crispy Pork Belly Adobo starts by simmering pork belly pieces in soy sauce, vinegar, water, garlic, bay leaves, black peppercorns, and brown sugar. The skin is kept facing up to maintain texture as the meat cooks slowly over low heat for about an hour and a half, with occasional flipping to brown all sides evenly. After simmering, the pork is allowed to rest uncovered so the skin can dry out. It is then transferred to a baking dish skin-side up and baked before finishing under the broiler, producing a crispy skin that contrasts with the tender pork beneath. The saved adobo sauce makes an excellent accompaniment to serve alongside this richly flavored dish.

  • 1 kg pork belly cut into 2-3 inch (5 cm) square pieces
  • 125 ml soy sauce Silver Swan brand
  • 125 ml vinegar
  • 125 ml water
  • 3-4 pcs bay leaves dried
  • 1 garlic slightly crushed, head
  • 1 teaspoon black peppercorns whole
  • 1 tablespoon brown sugar

Instructions

  1. Gather all your ingredients and place them into a pot, making sure the belly meat is facing down, with the skin-side up.
  2. Over low heat, simmer everything for about half an hour, and keep the pot covered.
  3. After the initial 30 minutes, flip the meat over to one of the uncooked sides once every 30 minutes, to ensure all sides are well browned.
  4. After an hour and a half, turn off the heat and uncover the pot, making sure the skin side is facing up. Let it sit for a few hours, allowing for the skin to dry out naturally.
  5. Next, move the pork belly pieces to a baking dish, ensuring the skin side is facing up so that it doesn't absorb the juices that will form while baking.
  6. Remember to save the adobo sauce from earlier for serving.
  7. Bake those pork belly pieces in a preheated oven at 375 °F/190 °C for 10-15 minutes.
  8. Next, switch to broil to get that crispy skin, but keep a close eye to prevent burning.
  9. Once it's perfectly crispy, remove the pork belly from the oven.
  10. Reheat the adobo sauce you saved earlier.
  11. Finally, serve your delicious crispy pork belly on a bed of white rice, generously smothered with that delicious adobo sauce.
