Crispy Za'atar Roasted Potatoes

Crispy Za'atar Roasted Potatoes are prepared from russet potatoes cut into chunks, tossed with olive oil, za'atar spice blend, salt, garlic powder, and black pepper. Roasting in the oven develops a crisp exterior with flavorful herbal Middle Eastern spices, resulting in a savory side dish with a tender inside and coated with aromatic za'atar.

Description

This recipe uses russet potatoes cut into one-inch pieces to ensure even cooking and crispiness. Coating the potatoes thoroughly with olive oil and a blend of za'atar, salt, garlic powder, and pepper provides a complex layer of seasoning that infuses the potatoes as they roast. The first stage of roasting sets a crisp foundation, and stirring halfway through helps promote even browning on all sides.

The technique results in roasted potatoes with a crunchy outside and soft, fluffy interior contrasted by za'atar's distinctive herbal, tangy notes. Za'atar, a Middle Eastern spice mixture typically containing thyme, sesame seeds, and sumac, adds a fragrant, slightly lemony character that complements the rich potato.

These potatoes make a versatile accompaniment to grilled meats, roasted vegetables, or can be served alongside salads or dips. Best served immediately after roasting to retain their crispness.

Ingredients

Servings
  • 4 russet potato cut in half length wise, then in half again, then sliced across into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tbsp za'atar spice blend
  • 3/4 tsp salt
  • 1/2 tsp garlic powder
  • black pepper to taste

Instructions

  1. Preheat oven to 400°. Add the potatoes to a medium/large bowl. Pour the olive oil over the potatoes, making sure to coat all the pieces. Sprinkle the seasonings over the potatoes, while stirring them around to make sure seasonings are distributed evenly.
  2. Add the potatoes to a greased baking sheet, moving them around so they are laying flat and bake for 20 minutes. Take the potatoes out of the oven, and stir them around and try to turn them over so the other side of the potato can now touch the bottom of the pan, then bake for 15 more minutes. Serve immediately. Enjoy!
