  • 1 white onion diced, large
  • 4 garlic minced, cloves
  • 2 tsp oregano fresh
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp chipotle pepper ground
  • 1 tbsp cumin
  • ¼ tsp cloves ground
  • 2.5-3 lb beef chuck roast
  • ¼ cup lime juice
  • ¼ cup apple cider vinegar
  • 2 cups beef broth
  • ¼ cup cilantro chopped
  • 3 bay leaf
  • 16 corn tortillas or tostadas, small

Optional Toppings

  • avocado sliced
  • jalapeños sliced
  • cilantro chopped
  • cotija cheese crumbled

Instructions

  1. Place the onion, garlic and oregano in the bottom of a crock pot.
  2. Combine the salt, pepper, chipotle powder, cumin and ground cloves in a small bowl.
  3. Rub this mixture on the beef chuck roast and place in the crock pot.
  4. In another medium bowl, combine the lime juice, apple cider vinegar, beef broth and cilantro.
  5. Pour this mixture over the beef, then add the bay leaves to the crock pot.
  6. Cover and cook on high for 6-8 hours.
  7. Remove the bay leaves and shred the beef.
  8. Place in tortillas, or on tostadas, and add the toppings of your choice!
