Crock Pot Buffalo Chicken Chili
Description
The recipe starts by layering boneless skinless chicken breasts with cannellini beans, fire-roasted diced tomatoes, green chilies, chicken broth, buffalo wing sauce, corn, celery, and seasonings into a crock pot. Simmering these ingredients slowly melds the flavors, and the chicken cooks until it easily shreds. The addition of cream cheese and shredded Monterey Jack cheese near the end of cooking creates a creamy, rich base that complements the slight heat from the buffalo sauce.
Textures vary from tender shredded chicken and soft beans to the crispness of celery and the distinct flavor of blue cheese crumbles sprinkled on top. The green onions add a fresh note as a finishing touch. This chili offers a filling meal that balances creamy, spicy, and tangy layers, suitable as a main course, especially in cooler weather.
Leftovers refrigerate well for up to five days in airtight containers. This chili can be reheated gently to preserve the creaminess of the cheese sauce and the tenderness of the chicken mixture.
