Description
Crock pot Chicken Fajitas require only a few ingredients: chicken breast strips, salsa, taco seasoning mix, sliced bell peppers, and onions. The chicken, salsa, and seasoning cook together in the crock pot on low or high heat until the chicken reaches a safe internal temperature of 165°F. The bell peppers and onions are added near the end of cooking to keep some texture and prevent over-softening.
The slow cooking method allows the chicken to absorb the flavors from the salsa and seasoning, making it tender and well-seasoned. The peppers and onions soften but maintain a bit of bite, complementing the meat’s texture. Limes squeezed over the finished fajitas add acidity and freshness.

Ingredients
- 4 chicken breast cut into strips, boneless skinless

- 2 Tablespoon taco seasoning

Instructions
- Place chicken, salsa, and taco seasoning in the crock pot.
- Cook on low for 4-6 hours or on high for 2-3 hours until the chicken is cooked through (internal temperature of 165 degrees F).
- Add in the peppers and onions into the crock pot for the last hour of the cooking time if cooking or low or 30 minutes if cooking on high.
- Cook until the veggies are the tenderness that you desire.
- Squeeze one lime over the chicken and peppers. Cut the other lime into wedges for serving.
- Serve the fajitas over warmed tortillas and more limes.

- Add bell peppers and onions at the start of cooking if you prefer them very soft to save time.
