Crock Pot Chicken Taquitos
Description
The recipe starts by seasoning chicken breasts with a blend of cumin, garlic powder, chili powder, salt, and pepper, then cooking it in a slow cooker with water for 4 hours until tender. After shredding the chicken, cream cheese and shredded cheese are stirred in to create a creamy, flavorful filling.
The filling is spread onto warmed flour tortillas, sprinkled with additional cheese, and rolled tightly. These taquitos can then be cooked further by baking or frying to achieve a crispy outer shell. They are commonly served with toppings such as sour cream, salsa, and avocado slices.
This method offers hands-off cooking with the slow cooker while delivering tender chicken that carries the warmth of southwestern spices enhanced by melting cheeses. The creamy cheese binding keeps the filling moist and flavorful inside the crispy tortilla.
For best results, warm tortillas before rolling to prevent cracking. Various toppings allow customization for extra freshness or spice.
