Description

The recipe begins by slow cooking chicken breasts with heavy cream, chicken broth, butter, garlic powder, and Cajun seasoning in a crock pot until the chicken is fully cooked and tender. The chicken is then removed, shredded or diced, and returned to the pot. Uncooked penne pasta is stirred in to cook gently in the flavorful sauce. Parmesan cheese is added at the end to melt in, thickening the sauce and adding umami complexity.

  • 2 pounds chicken breast
  • 2 cups heavy whipping cream
  • 4 cups chicken broth
  • 4 Tablespoons butter
  • 2 Tablespoons Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1 pound penne pasta
  • 1 cup Parmesan Cheese grated

Instructions

  1. Add the chicken, heavy whipping cream, chicken broth, butter, garlic powder and cajun seasoning into a 6 quart crock pot.
  2. Cover and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is cooked through (has an internal temperature of 165 degrees F).
  3. Remove the chicken from the crock pot and shred or dice it into large pieces.  
  4. Whisk the sauce in the crock pot.  Return the chicken back to the crock pot and stir in the uncooked pasta. 
  5. Cover and cook on high for 20-30 minutes until the pasta is tender and cooked through. 
  6. Then stir in the parmesan cheese. Cover for 5 minutes and allow the cheese to melt. 
  7. Serve warm and enjoy! 

Notes

  • Reduce Cajun seasoning by half if sensitive to spicy flavors.
  • Store leftovers in an airtight container in the refrigerator for up to five days.
