Description

  • 3 lbs chicken breast boneless skinless
  • 1/2 cup butter
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons garlic minced
  • 1/2 teaspoon salt
  • 2 cups heavy whipping cream
  • 1 tbsp cornstarch
  • 1 cup Parmesan Cheese grated
  • 2 cups spinach chopped, fresh

Instructions

  1. Add chicken to the crock pot. Top the chicken with the butter, minced garlic and salt.
  2. Cover and cook on low for 5-7 hours or on high for 2.5-3.5 hours until the chicken has an internal temperature of 165 degrees F.
  3. After this time, remove the chicken. Then stir together the cornstarch, heavy whipping cream and grated parmesan cheese in a small bowl.
  4. Whisk this mixture into the sauce in the crock pot, stir the spinach into the sauce and place the chicken back on top.
  5. Cover and cook on low for 30 minutes to thicken and heat the sauce through and the spinach is slightly wilted.
  6. Serve warm as is or over pasta and enjoy!

Notes

  • Browning the chicken before slow cooking can add more flavor, but is optional.
  • Use grated Parmesan, not shredded, for smoother melting into the sauce.
  • Store leftovers airtight in the refrigerator for up to 5 days.
