Crock Pot Creamy Parmesan Chicken Recipe
Description
This recipe uses boneless skinless chicken breasts cooked slowly in a crock pot with butter, garlic, salt, and Italian seasoning. The extended simmer tenderizes the chicken and builds savory juices. Afterward, a mixture of heavy whipping cream, cornstarch, and grated Parmesan cheese is whisked into the cooking liquid to create a thick, creamy sauce that clings to the meat.
Fresh chopped spinach is stirred in near the end, wilting gently and adding color and a mild vegetal flavor. The creamy texture combined with Parmesan's umami creates a rich dish balanced by the freshness of spinach. It can be served as is or poured over pasta for a more substantial plate.
For deeper flavor, browning the chicken beforehand is optional. The use of grated Parmesan ensures even melting in the sauce. Leftovers should be stored in airtight containers refrigerated up to five days.
Ingredients
- 3 lbs chicken breast boneless skinless
- 1/2 cup butter
- 1/2 teaspoon Italian seasoning
- 2 tablespoons garlic minced
- 1/2 teaspoon salt
- 2 cups heavy whipping cream
- 1 tbsp cornstarch
- 1 cup Parmesan Cheese grated
- 2 cups spinach chopped, fresh
Instructions
- Add chicken to the crock pot. Top the chicken with the butter, minced garlic and salt.
- Cover and cook on low for 5-7 hours or on high for 2.5-3.5 hours until the chicken has an internal temperature of 165 degrees F.
- After this time, remove the chicken. Then stir together the cornstarch, heavy whipping cream and grated parmesan cheese in a small bowl.
- Whisk this mixture into the sauce in the crock pot, stir the spinach into the sauce and place the chicken back on top.
- Cover and cook on low for 30 minutes to thicken and heat the sauce through and the spinach is slightly wilted.
- Serve warm as is or over pasta and enjoy!
Notes
- Browning the chicken before slow cooking can add more flavor, but is optional.
- Use grated Parmesan, not shredded, for smoother melting into the sauce.
- Store leftovers airtight in the refrigerator for up to 5 days.
