  • chicken breast
  • 1 packet ranch seasoning mix
  • 2 Tbsp taco seasoning
  • 1 can black beans drained and rinsed, 15 ounces
  • 1 can ROTEL 8 oz
  • 1 can corn not drained, 15 ounces
  • 1 block cream cheese
  • 2 lime fresh

Instructions

  1. Add the chicken and place all the ingredients except the limes and the cream cheese in the crock pot.
  2. Cover and cook on high in the slow cooker for 3-4 hours or low for 6-8 hours.
  3. Shred the chicken.
  4. Squeeze the limes over the chicken mixture , add cream cheese and stir to combine.
  5. Continue to heat in the crock pot until the cream cheese is fully melted (usually 30-60 minutes).
  6. Serve over rice or with tortillas. Enjoy!

Notes

  • You can add green chilis, bell peppers, or diced tomatoes to increase vegetable content and flavor.
  • Allowing the mixture to rest for 30 minutes enhances liquid absorption and flavor melding.
