Description

The soup begins by rinsing the 15-bean mix and setting aside the seasoning packet. Beans, chicken broth, a ham bone or diced ham, diced onion, minced garlic, and optional chili powder are combined in a slow cooker and cooked until the beans are tender—typically 5 hours on high or 7-8 hours on low. Acidic ingredients like diced tomatoes and lemon juice are added only after the beans soften to prevent toughening.

Once the beans are tender, the ham bone is removed and any meat left on it is chopped and returned to the soup with diced tomatoes, seasoning packet, and lemon juice. The soup simmers for an additional 30 minutes to combine flavors.

The result is a thick, savory bean soup with smoky ham flavor and mild kick from chili powder or hot sauce if used. It is suitable for a comforting main dish or hearty side, garnished with fresh parsley if desired.

  • 8 cups chicken broth or chicken stock, reduced sodium
  • 1 ham bone or ham hocks, diced ham or 1 lb. cooked sausage, meaty
  • 1 medium yellow onion diced
  • 1 clove garlic minced
  • 1 teaspoon chili powder optional
  • 15 ounces diced tomatoes with juices, 1 can, canned
  • 1 lemon juiced
  • hot sauce or red pepper flakes to taste, optional

Instructions

  1. Rinse the beans and drain. Sort any unwanted debris and set seasoning packet aside.
  2. In a 6qt crockpot, add the beans, broth, ham bone (if using), onion, garlic, and chili powder in a 6qt slow cooker. Do not add lemon or tomatoes until the beans are softened.
  3. Cook on high for 5 hours (or low for 7-8) or until the beans are tender.
  4. Once the beans are tender, remove the ham bone (if using), chop any meat left on the bone, and add it back to the slow cooker.
  5. Stir in the diced tomatoes, ham seasoning packet, and lemon juice.
  6. Cook for an additional 30 minutes. Season with salt and black pepper to taste and garnish with fresh parsley if desired.

Notes

  • Do not add acidic ingredients like tomatoes and lemon juice until beans are fully softened to avoid toughening the beans.
  • Substitute chicken broth with water, beef broth, or vegetable broth as preferred.
  • No soaking is necessary when cooking beans in a slow cooker, but soaked beans require reducing liquid by about 1 cup.
  • Ham bones from leftover ham or deli counters add rich flavor; chopped leftover ham or ham hocks can be alternates.
  • Adjust the soup thickness by adding more broth or pureeing part of the beans to thicken.
