  • 1 1/2 pound chuck roast cut into 1 1/2 inch pieces or pre-cut stew meat
  • 1/4 cup flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 pounds Yukon Gold potato quartered
  • 1 pound carrot baby
  • 1 onion diced
  • 1 tablespoon garlic minced
  • 5 cups beef broth
  • 1 8 oz tomato paste canned
  • 1/4 cup red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon thyme dried
  • 2 bay leaf
  • parsley fresh, chopped to top

Instructions

  1. In a large bag, place the roast, flour, salt and pepper. Toss to coat. Place in the bottom of the crock pot.
  2. Pour everything else on top.
  3. Cover and cook on low for 8 hours or until beef is tender
  4. Remove the bay leaves and serve.
  5. Top with fresh parsley.
