Crock Pot Italian Chicken Tortellini Soup Recipe
Description
The Crock Pot Italian Chicken Tortellini Soup recipe layers sliced carrots, celery, onion, and minced garlic in a slow cooker with chicken broth, tomato-based pasta sauce, Italian seasoning, salt, and pepper. Boneless skinless chicken thighs are submerged in the mixture and cooked on low for 5 to 6 hours until tender. The chicken is gently shredded and returned to the pot along with frozen cheese tortellini, which cooks for about 20 minutes until warmed through and tender. Optionally topped with Parmesan cheese, the result is a thick, flavorful soup melding the sweetness of vegetables, rich tomato sauce, and tender meat with soft pasta.
This soup makes a satisfying meal especially in cooler weather. The slow cooker method allows hands-off cooking and melds the flavors deeply while keeping the chicken moist if timed well. Checking the internal temperature ensures safe doneness. Longer cook times can dry the chicken, so 5-6 hours on low is optimal. This recipe serves well as a main dish and pairs nicely with crusty bread.
Leftovers reheat well. The soup can be adjusted in seasoning according to taste. The use of frozen tortellini simplifies preparation without sacrificing texture.
Ingredients
- 1 1/2 cups carrot sliced
- 1 1/2 cups celery sliced
- 1 cup onion chopped
- 3 cloves garlic minced
- 3 cups chicken broth
- 1 (24 oz.) jar pasta sauce 2 1/2 cups
- 1 Tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper ground
- 1 1/4 lb. chicken thighs boneless, skinless, 20 oz
- 16 oz. cheese tortellini frozen
- Parmesan Cheese optional, for serving
Instructions
- Add the carrots, celery, onion, and garlic to a large, 6 quart slow cooker.
- Add the broth, pasta sauce, Italian seasoning, salt, and pepper to the crock pot. Stir well.
- Add the chicken thighs to the liquid, trying to submerge the chicken.
- Cover and cook on low for 5-6 hours*.
- Remove the chicken from the crock pot and slightly shred. Return the chicken to the slow cooker. Add the tortellini and stir well. Cover and cook on low for 20 minutes, until the tortellini is warmed through.
- Serve warm with parmesan cheese.
Notes
- Cook on low for 5-6 hours to keep chicken moist; longer cooking can dry it out.
- Ensure chicken reaches an internal temperature of 165°F (74°C) for safety.
- Frozen cheese tortellini can be added directly to the slow cooker without thawing.
- Serve with grated Parmesan cheese for added richness.
