Description
This slow cooker recipe layers diced carrots, garlic, and onions at the bottom as a flavorful bed for thinly sliced chuck roast steak. The steak is seasoned with garlic and onion powders and olive oil, then placed over the vegetables. Beef stock and fresh herb sprigs such as rosemary or thyme are added before cooking on high for four hours.
After cooking, the steak is rested separately while the liquid and vegetables in the crock pot are blended into a smooth gravy. The meat is trimmed of excess fat, returned to the pot, and seasoned with fresh ground pepper and parsley. The result is a tender, flavorful steak immersed in a hearty, herb-infused gravy with a smooth texture.

Ingredients
- 2 pounds chuck roast steak thin sliced
- 2-3 carrot peeled and washed, large
- 1 white onion large
- 6 cloves garlic
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 tablespoons olive oil
- 16 oz beef stock or bone broth
- 2-3 rosemary sage, thyme, or other herbs you love, sprigs, fresh
Instructions
- Dice carrots, garlic, and onions, place in bottom of slow cooker.
- Lay chuck steaks over vegetables in slow cooker and top with garlic and onion powder, and olive oil.
- Add stock and give a quick stir to slow cooker. Place fresh sprigs of herbs on top.
- Add lid and set slow cooker to high. Cook 4 hours.
- After 4 hours, remove steaks from slow cooker and set aside on plate or cutting board to rest.
- As meat rests, using an immersion blender (or add liquid in slow cooker into a blender), blend until liquid and vegetables in the slow cooker become a thick, velvety smooth gravy.
- Trim excess fat from steaks and add back to slow cooker. Season with fresh ground pepper and top with chopped parsley.
- Serve with potatoes, yorkshire pudding, salad, vegetables, over pasta or rice, and enjoy!
