Description
The recipe starts by browning ground beef on the stovetop with diced onion, then transferring it to a slow cooker with green bell pepper, minced garlic, taco seasoning, tomato sauce, salsa, milk, and beef broth. The mixture cooks on low for 6-8 hours or high for 3-4 hours, allowing flavors to develop fully.
Near the end, uncooked elbow macaroni is stirred in and cooked for an additional 15 minutes; during this time, the pasta absorbs liquid and softens. Finally, shredded cheddar cheese is folded into the warm mixture until melted, creating a creamy, cheesy sauce coating the pasta and seasoned beef.

Ingredients
- 2 pounds ground beef
- 1/2 onion diced
- 1 green bell pepper diced
- 1 teaspoon garlic minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons taco seasoning
- 1 tomato sauce 8 oz, canned
- 1 cup salsa
- 3 cups milk
- 2 cups beef broth
- 3 cups elbow macaroni dry, uncooked
- 3 cups cheddar cheese shredded
Instructions
- In a skillet over medium heat, cook ground beef until it is brown. (Or use your Ninja)
- Add to a 6 quart slow cooker.
- Add in bell pepper, seasonings, tomato sauce, salsa, milk and broth. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4.
- 15 minutes before serving stir in the pasta. It will look very watery but don't worry the pasta will soak it up. Cover and cook for 15 minutes until the desired tenderness is reached.
- Stir in the cheese until melted.
- Serve immediately. Top wth sour cream, diced tomatoes and chives.
