  • 3 large carrot peeled and sliced
  • 1 (12 ounce) broccoli florets or sub with about 4 cups of fresh broccoli florets, frozen, in bag
  • 1 ½ - 2 lbs. chicken thighs boneless, skinless, or chicken breasts
  • 1 (10.75 oz) condensed cream of mushroom soup from can
  • 1 (10.75 oz) condensed cream of chicken soup can
  • ¼ cup water
  • 3 ½ cups herb-seasoned stuffing mix dry, about 7.5 ounces, Pepperidge Farm brand
  • cup butter melted

Instructions

  1. Spray inside of a slow cooker with cooking spray. Place carrots and broccoli at the bottom of the prepared slow cooker.
  2. Season chicken with salt and pepper and place on top of the vegetables.
  3. In a medium bowl, whisk together condensed mushroom soup, condensed chicken soup, and water. Pour sauce over the chicken.
  4. Sprinkle dry stuffing mix over top of the chicken. Drizzle with melted butter.
  5. Put a lid on the slow cooker and cook on LOW heat for 4-6 hours or on HIGH for 2-3 hours.

Notes

  • You can omit broccoli or substitute with other vegetables if you prefer less soft textures.
  • Vegetables can be left out entirely, cooking only chicken and stuffing if desired.
