Ingredients
- 3 large carrot peeled and sliced
- 1 (12 ounce) broccoli florets or sub with about 4 cups of fresh broccoli florets, frozen, in bag
- 1 ½ - 2 lbs. chicken thighs boneless, skinless, or chicken breasts
- 1 (10.75 oz) condensed cream of mushroom soup from can
- 1 (10.75 oz) condensed cream of chicken soup can
- ¼ cup water
- 3 ½ cups herb-seasoned stuffing mix dry, about 7.5 ounces, Pepperidge Farm brand
- ⅓ cup butter melted
Instructions
- Spray inside of a slow cooker with cooking spray. Place carrots and broccoli at the bottom of the prepared slow cooker.
- Season chicken with salt and pepper and place on top of the vegetables.
- In a medium bowl, whisk together condensed mushroom soup, condensed chicken soup, and water. Pour sauce over the chicken.
- Sprinkle dry stuffing mix over top of the chicken. Drizzle with melted butter.
- Put a lid on the slow cooker and cook on LOW heat for 4-6 hours or on HIGH for 2-3 hours.
Notes
- You can omit broccoli or substitute with other vegetables if you prefer less soft textures.
- Vegetables can be left out entirely, cooking only chicken and stuffing if desired.
- Slow cooker temperatures vary, so cooking times should be adjusted based on your appliance's characteristics.
- The dish is done when chicken reaches an internal temperature of 165°F and stuffing is cooked through.
