  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon brown sugar
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • ¼ cup chicken broth reduced sodium
  • 3 chicken breast boneless skinless
  • 1 red bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 1 onion thinly sliced
  • 1 cup tomato salsa

Instructions

  1. In a small bowl, combine chili powder, salt, brown sugar, garlic powder, cumin and cayenne pepper.
  2. In a 2 ½-4 quart crockpot, add broth and chicken breasts in a single layer. Sprinkle chicken with half of the seasoning.
  3. Top with peppers and onion and season with remaining seasoning mix.
  4. Add salsa and spread into a thin layer on top of the peppers.
  5. Put the lid on and cook on low for 3-4 hours, or on high for 2 hours, until chicken reaches an internal temperature of 165°F degrees.
  6. Serve with tortillas, salsa, rice, sour cream, and cheese as desired.
