Crockpot Goulash
Description
The Crockpot Goulash recipe uses ground beef browned with onions as the base, enriched with garlic, green bell pepper, and Italian seasoning to build a layered savory profile. Canned crushed and diced tomatoes along with beef broth create a rich, tomato-based sauce that slowly simmers in the crockpot, melding the flavors deeply. Adding dry macaroni near the end allows the pasta to cook gently in the sauce, soaking up the juices and thickening the dish.
The final dish offers a tender texture from the meat combined with soft pasta and a slightly chunky vegetable presence, yielding a filling meal that can be served directly from the slow cooker. It works well as a standalone dinner or can be complemented with a sprinkle of shredded cheese on top for added richness.
This recipe benefits from the slow cooking method which tenderizes the vegetables and infuses the beef with Italian spices, while the timing to add pasta just before serving ensures it is cooked but not overdone. It is practical for easy preparation and warm comfort food.
Ingredients
- 2 pounds ground beef
- 1/2 onion diced
- 1 green bell pepper diced
- 2 teaspoon garlic minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 crushed tomatoes 14.5 oz, canned
- 1 diced tomatoes 14.5 0z, canned
- 3 cups beef broth
- 3 cups macaroni dry, uncooked
Instructions
- In a skillet over medium heat, brown the ground beef with the onion. Drain off the excess grease and add to a 6 quart slow cooker.
- Add in bell pepper, Italian Seasoning, salt, pepper, garlic, tomatoes, and broth. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4.
- 15 minutes before serving stir in the pasta. It will look very watery but don't worry the pasta will soak it up. Cover and cook for 15 minutes until the desired tenderness is reached.
- Serve immediately.
Notes
- Serve immediately after cooking pasta to retain its texture and avoid mushiness.
- A sprinkle of shredded cheese on top is optional for added flavor.
