Description
The Crockpot Italian Chicken Pasta recipe uses raw chicken breast tenders cooked slowly with onions, garlic, cream cheese, a jar of marinara sauce, and Italian seasoning. The slow cooker method softens the chicken and infuses the sauce with the seasoning and tang of marinara, while the cream cheese adds smoothness. Once the chicken is cooked and shredded, it’s returned to the sauce to blend well before being combined with cooked pasta.
This dish offers a creamy tomato-based pasta sauce with tender chicken pieces throughout, suitable for a comforting meal any day. Fresh basil adds an herbaceous note on top. The slow cooker method allows for minimal hands-on time and even cooking.
To prevent sticking, spreading a little marinara sauce on the bottom of the crockpot before adding other ingredients helps. Italian seasoning blends can be adjusted according to preference or replaced with your own mix of basil, oregano, and thyme.
Ingredients
- 1 onion chopped
- 2 cloves garlic minced
- 1.25 pounds chicken breast tenders raw
- salt to taste
- black pepper to taste
- 25 oz marinara sauce one jar
- 12 oz cream cheese
- 1 teaspoon Italian seasoning
- 2 bay leaf
- 1 lb pasta cooked, I used Gemelli pasta noodles
- 1 tablespoon basil fresh, chiffonade for garnish (optional)
Instructions
- Add diced onion, garlic, chicken breasts, cream cheese, marinara sauce, and seasonings into a cold crockpot.**
- Cover and cook on high 3-4 hours. If your crockpot runs hot, you might want to check the chicken for doneness at 2 1/2 hours.
- Once the chicken is cooked, remove, shred and return back to crockpot. At this point remove the bay leaves as well. Stir to melt cream cheese into sauce completely.
- Toss with freshly cooked pasta, garnish with fresh basil and serve.
Notes
- Spread marinara sauce on the bottom of the crockpot before adding ingredients to help prevent sticking.
- Adjust Italian seasoning to your taste or create your own mix with basil, oregano, and thyme.
- Check chicken doneness at 2.5 hours if your crockpot runs hot to avoid overcooking.
