Description
This recipe combines white chocolate chips, semi-sweet chocolate chips, white chocolate almond bark, and lightly salted peanuts into a single crockpot cooking step. The mixture is heated on low, melting the chocolates and thoroughly coating the peanuts. After about an hour and a stirring midway through, the mixture is dropped by spoonfuls onto parchment to cool and harden into clusters.
The slow cooker method helps evenly melt the chocolates without seizing or burning, ensuring the peanuts are covered in a creamy chocolate shell. The texture features the crunch of peanuts balanced with the softness of the chocolate.
These clusters can be chilled or frozen for storage and should be served at room temperature for the best mouthfeel. An optional step is melting additional white chocolate almond bark to drizzle over the clusters for a finishing touch.
Ingredients
- 12 ounces white chocolate chips
- 12 ounces chocolate chips semi-sweet
- 1 pound white chocolate almond bark or 8 2-oz. cubes, plus more if you want the white chocolate drizzle on top
- 2 pounds peanuts lightly salted
Instructions
- Combine all ingredients in a large crockpot.
- Cook on LOW heat for 1 hour, stirring once halfway through.
- Using a spoon or cookie scoop, scoop clumps of peanut mixture onto parchment paper and allow to cool to room temperature. You may refrigerate or freeze them. Be sure to serve at room temperature for the best texture.
- Optional: Melt white chocolate almond bark and drizzle over the top of the set clusters.
