Crockpot Stuff Pepper Soup

Report
This Crockpot Stuff Pepper Soup features ground beef mixed with diced onions, red and green bell peppers, tomatoes, and herbs slowly cooked in a savory broth. The soup is finished by spooning cooked white rice on top, adding heartiness and texture. Slow cooking melds the flavors and softens the vegetables, creating a comforting meal suitable for chilly days.

Description

The Crockpot Stuff Pepper Soup combines ground beef with diced onions and both red and green bell peppers, cooked alongside canned tomatoes and tomato sauce, seasoned with oregano, garlic salt, black pepper, and Worcestershire sauce. The slow cooker allows the pork and vegetables to tenderize over several hours, enriching the broth. Adding cooked white rice just before serving contributes a soft, filling base that complements the flavorful soup.

The dish balances savory, slightly tangy tomato notes with aromatic herbs and the mild sweetness of bell peppers. Slow cooking ensures the peppers become tender, but if a firmer texture is preferred, they can be added later in the cooking process. This soup offers a filling main course, especially well paired with crusty bread or a light salad.

Leftover soup keeps well refrigerated for up to five days in an airtight container, making it a practical make-ahead meal option. Adjusting the timing of bell pepper addition allows control over their softness in the soup texture.
