Crockpot Vegetable Beef Soup
Description
The Crockpot Vegetable Beef Soup starts with browned and drained ground beef mixed with diced onions, peeled and diced potatoes, frozen mixed vegetables, canned diced tomatoes, beef broth, and Italian seasoning. Salt and black pepper season the broth, creating a savory base.
The entire mixture cooks slowly in a covered crockpot for several hours, allowing flavors to blend and the potatoes to become tender but not mushy. This low and slow method produces a hot, flavorful soup with a balance of meat and vegetables in a tomato-tinged broth.
It can be served as a filling lunch or dinner, ideal for colder weather or when an easy, set-it-and-forget-it meal is needed. A quick stovetop version is possible by simmering all ingredients in a stock pot for 30 to 40 minutes if preferred.
Flexible for ingredients and cooking methods, this soup’s make-ahead and reheating ease adds practical value for busy cooks.
