Croquetas De Atún are tuna patties mixed with mashed potatoes, breaded and cooked until golden. This recipe uses canned white albacore tuna combined with cooked russet potatoes, seasoned simply with salt and pepper, then bound with egg and coated in breadcrumbs. Description

This recipe starts with simmering cubed potatoes until tender, then draining and mashing them together with canned tuna. Seasoned with kosher salt and black pepper, the mixture is formed into patties, dipped in beaten egg, and coated with bread crumbs. The patties can be fried in avocado, grapeseed, or vegetable oil for a golden crust, or baked/air fried for a less oily finish.

Ingredients

  • 2 white albacore tuna or your preferred can of tuna, 5 oz cans, in water
  • 1 large russet potato peeled and cut into cubes
  • 1 egg beaten
  • 1 cup bread crumbs or panko crumbs
  • ¾ tsp kosher salt
  • ½ tsp black pepper

If frying in pan:

  • ½ cup avocado oil add more oil if needed, or grapeseed or vegetable oil

if baking or in air fryer

  • olive oil for coating tuna patties

Instructions

Make the croquettes

  1. Place the potatoes in a small sauce pan and cover with water. Cook on medium-high heat until potatoes are cook through. Drain when they're cooked.
  2. While the potatoes are cooking, add the egg in a shallow bowl and beat with a fork. In another bowl, add the bread crumbs and season with salt & pepper. Set both bowls aside.
  3. Drain the tuna and place in a medium bowl . Add the cooked potatoes, salt & pepper.
  4. Mix well and mash tuna & potatoes with a hand masher or a fork.
  5. Form the tuna patties by squeezing them first then forming into patties. You can make them in any shape you want!
  6. Pass thru the croquettes thru the egg mixture then coat with bread crumbs.

Cooking options:

  1. IN FRYING PAN: Heat oil over medium-high heat. Working in batches, fry the croquettes until golden browned on all sides. About 1 minute per side. Drain on paper towels.
  2. IN OVEN: Preheat oven to 400 degrees. Arrange the tuna patties on a lightly greased baking sheet. Spray or brush the top of the tuna patties with olive oil. Bake for about 20 minutes, turning once, until golden browned on both sides.
  3. IN AIR FRYER: Preheat, arrange the tuna patties on surface. Spray or brush the top of the tuna patties with olive oil. Bake for about 20 minutes, turning once, until golden browned on both sides.
  4. Serve while warm.

Notes

  • Prepare tuna croquettes up to forming patties, then freeze them flat on a tray for about 4 hours before packaging for longer storage.
  • When ready to cook, thaw frozen patties in the refrigerator or at room temperature before frying or baking.
