Crunch Bar Cookies Recipe
Description
These Crunch Bar Cookies have a rich chocolate base, enhanced with unsweetened cocoa powder and chocolate chips folded in alongside puffed rice. The mixture of melted butter and sugar ensures a moist dough, while baking soda provides leavening to achieve a tender crumb. The puffed rice maintains its light, crispy texture through baking rather than becoming soggy, offering a contrast to the soft cookie centers. Chilling the dough prior to baking helps the cookies keep their shape and promotes even baking.
Once baked, the cookies firm up as they cool and can be stored at room temperature or refrigerated depending on desired texture and storage time. Using a cookie scoop ensures consistent cookie sizes for even baking and presentation. Pure vanilla extract is recommended for optimal flavor.
Ingredients
- 10 tablespoons butter melted (1¼ sticks, unsalted
- 1 cup granulated sugar
- 1 egg large
- 1 teaspoon vanilla extract pure
- 1¼ cups all-purpose flour
- ¼ cup cocoa powder unsweetened
- 1 teaspoon baking soda
- ¼ cup chocolate chips
- ½ cup puffed rice
Instructions
- In a large bowl, whisk together the melted butter and granulated sugar until well combined.
- Whisk in the egg and vanilla and stir to combine.
- Add the flour, cocoa powder, and baking soda and stir until no large lumps remain.
- Gently fold in the chocolate chips and puffed rice-- you don’t want to smush the rice.
- Transfer the dough to the fridge to chill for 30 minutes.
- While it is cooling, preheat the oven to 350°F and line 2 baking sheets with parchment paper.
- Scoop 2-tablespoon-sized cookie dough balls onto the baking sheets about 2 inches apart. Bake until the cookies are set around the edges, but still slightly soft in the center, about 12 minutes.
- Allow the cookies to cool on the baking sheet-- they will set as they cool. Then, transfer the cooled cookies to an airtight container.
Notes
- Store Crunch Bar Cookies in an airtight container at room temperature for up to 3 days.
- For longer storage, refrigerate them up to 5 days or freeze for up to 1 month.
- Use a cookie dough scoop to create uniform cookies that bake evenly.
- Choose pure vanilla extract for the best flavor over imitation versions.
