Crunch Granola Bar Recipe

Crunch Granola Bars combine quick oats, rice crispy cereal, almonds, and dry roasted peanuts bound together with a honey and vanilla syrup, baked until set, and topped with melted dark chocolate, shredded coconut, and peanuts. This produces bars with a crispy, chewy texture and layered nutty and sweet flavors, suitable as a snack or energy bar.

Description

The recipe mixes dry ingredients: oats, rice cereal, almonds, and peanuts. A honey, vanilla, and sea salt syrup is boiled and poured over the dry mix to bind it together. The mixture is packed into a foil-lined pan and baked initially for 20 minutes, then patted down again. Dark chocolate pieces are placed on top, and the pan returns to the oven for 5 more minutes until the chocolate melts. The melted chocolate is spread evenly, then topped with shredded coconut and additional peanuts, which are gently pressed into the chocolate as it cools and hardens.

This baking and topping process creates a granola bar with a firm but chewy texture from oats and cereal, a rich chocolate layer, and crunchy nuts for texture. The combination of honey sweetness and sea salt enhances the flavor complexity. Refrigeration expedites the chocolate setting before cutting into bars.

These bars make a convenient snack with a mix of textures and nutty, sweet flavors. The combination of ingredients offers both energy and satisfying crunch, fitting for a homemade alternative to packaged granola bars.

Ingredients

Servings
  • 1 1/2 cups quick oats
  • 1 1/2 cups rice crispy cereal
  • 1/2 cup almonds whole
  • 1/2 cup peanuts dry roasted
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt sea salt
  • Topping
  • 2 dark chocolate candy bars
  • 1/4 cup coconut shredded
  • 1/4 cup peanuts dry roasted

Instructions

  1. Line a 8 X 10 pan with foil and spray with cooking spray. Set aside.
  2. Preheat oven to 350 degrees.
  3. In a large bowl combine oats, rice cereal, almonds and peanuts.
  4. In a small sauce pan whisk together honey, vanilla and sea salt. Bring to a rolling boil and pour over dry ingredients. Fold into ingredients and mix until coated with honey. Pour into prepared pan and pack down ingredients with a spatula or spoon.
  5. Bake for 20 minutes. Remove from oven and pat down ingredients again. Place chocolate pieces on top and put back in the oven for another 5 minutes. Take out of oven and with a rubber spatula spread chocolate until a thin layer coats the top. Sprinkle coconut over chocolate and nuts. Gently pat ingredients into the chocolate. Let cool until chocolate hardens (place in refrigerator to speed cooling). Remove foil and cut into 8-10 bars.
